Job Description

Provide a first class service to the hotel guest & employee
Monitor key departmental costs
Prepare and check the departmental rotas to ensure that staffing levels in accordance with the agreed budget are controlled and monitored
Undertake purchasing for the department within the company guidelines
Undertake all budgetary controls to achieve budgeted gross profit.
An excellent financial awareness and understanding of how the role impacts the hotel P& L
Ensure the efficient and effective running of the Kitchen Brigade
Ensure that the preparation and presentation of the food is of a high standard, and complies with food safety regulations.
Supervise, train and motivate team to achieve company standards, and also to comply with Food and Health & Safety regulations HACCP/ASC
Plan and implement all new menus and to ensure that all commodities are on site, at appropriate stock levels to service the business

Person Specification

Previous experience in a minimum of 3 rosette restaurant
Be passionate, inspirational and committed as well as a Team leader.
Previous experience in a luxury hotel
